EN// Hello my lovelies! Last week I was eating to 90% vegan and I was trying out intermittent fasting. I really have to say if you are able to plan your day and your meals right, it’s really not that difficult. My favorite recipe in that week was this Mexican Style Baked Sweet Potato recipe! Super easy to make and so delicious. Try it! I promise you you won’t regret it 😉
Ingredients (two people):
2 big sweet potatoes
1 red bell pepper
1 small onion
1 cup of corn
1 Cup of chickpeas or other beans
1 Cup of canned tomatoes
2 tbsp of maple sirup
taco seasoning (Paprika, garlic, cumin, salt, pepper)
Avocado, sour cream, nacho Chips (optional)
Instructions: Preheat the oven up to 220 degress celcius, wash the sweet potatoes and pierce it several times with a fork. Place them on a baking tray and put it in the oven. Cook until soft (at least 30 minutes). While waiting for the sweet potatoes, prepare the topping. Cut the onion and the bell pepper into small pieces, wash the corn and the chickpeas. Place the onion pieces into a pan with a Little bit of olive oil and cook until soft, then add the bell pepper and the corn an chickpeas. Cook for a few minutes and add the canned tomatoes. Cook for about 8 minutes and then add the maple sirup and the seasoning. Take out the sweet potatoes, cut it in half and place the topping on top. You can add Avocado, sour cream and nacho Chips on top. Then it tastes even better, but I wanted to save some calories 😉

DE// Hallo meine Lieben! Letzte Woche habe ich zu 90% vegan gegessen und intermittierendes Fasten ausprobiert. Ich muss wirklich sagen, wenn man einen guten Essensplan macht, dann ist es gar nicht so schwierig es durchzuhalten. Eines meiner Lieblingsrezepte, die ich diese Woche ausprobiert habe, war diese “Mexican Style Baked Sweet Potato”. Wirklich einfach zu machen und sehr lecker! Probiert es aus!
Zutaten:
2 große Süßkartoffeln
1 rote Paprika
1 kleine Zwiebel
150 g Mais
200 g Kichererbsen
1 Dose passierte Tomaten
2EL Ahornsirup
Taco Gewürz (Knoblauch Pulver, Paprika, Salz, Pfeffer, Kreuzkümmel)
Avocado, Sour Cream, Nacho Chips
Zubereitung: Den Ofen auf 220 Grad vorheizen. Währenddessen die Süßkartoffeln waschen, mit der Gabel einstechen und in den Ofen geben. Backen bis sie weich geworden sind (mindestens 30 Minuten). Währenddessen das Toping zubereiten. Dafür die Zwiebel und die Paprika schneiden und in einer Pfanne mit Öl paar Minuten anbraten. Dann Mais und Kichererbsen hinzufügen und nochmal 3 Minuten braten. Die passierten Tomaten dazu geben und alles für 8 Minuten kochen. Dann Ahornsirup und Gewürze hinzufügen und das wars 😉 Wenn ihr wollt, könnt ihr noch Avocado, Sour Cream und Nacho Chips also Topping drauf geben, dann schmeckt es noch besser. Ich wollte mir allerdings ein paar Kalorien sparen 😉
FR// Coucou! J’ai une super facile et bon recette pour vous aujourd’hui: Une patate douce “mexican style”.
Ingredients:
2 patate douce
1 poivrin rouge
1 oignon
150 g mais
200 g poic chiches
1 cannette sauce tomate
2 cas sirop d’erable
Assaisonnement mexicain (ail, Paprika en poudre, sel, poivre, cumin)
Avocat, Sour Cream, Nacho Chips
Preparation: Préchauffer le four a 220 degrees. Laver les patates douces, piquer généreusement à la fourchette et mettre la dans le four. Faire cuire au four pendant au moins 30 minutes (jusq’elles sont quites). Pendant le temps d’attente preperer la sauce. Couper les oignons et le poivron rouge et faire les dorer dans une poêle pour quelques minutes. Ajouter le mais, les pois chiches et la sauce tomate et faire mijoter pour 8 minutes. Aprés ajouter l’assaisonnement et le sirop d’erable a votre goût et deposer la Sauce sur la patate douce. C’est tout!
